Chicken Scampi on a Bed of Angel Hair Pasta

Today I craved Chicken Scampi with Angel Hair Pasta. This is a delicious and quick dish. It takes less than thirty minutes to make.




1. Dice two pieces of boneless chicken cutlets.



2. Chop 1 1/2 large onions, 4 garlic cloves, 2 teaspoons of lemon

3. In a hot skillet, add 2 table spoons of butter (or a substitute of your liking), 4 large spoonfuls of olive oil and saute the onions and garlic for approximately 3-4 minutes. Do not let it brown.


 4. Add the chicken, a tablespoon of salt and 1 tablespoon of black pepper.

 5. Then add 2 teaspoons of lemon and stir. Cover for 15-20 minutes.


6. Boil 3 quarts of water. Add salt to your liking and a teaspoon of olive oil to prevent the noodles from sticking to each other.
Cook the pasta 5 minutes before the chicken is fully cooked.
Use a whole package of Angel Hair Pasta for this recipe. You will have enough to feed 6-8 people or store leftovers for a couple of days. 

                           

7. Drain the pasta. Do not blanch, keep the pasta hot.
                                          
8. Empty pasta back in the pot or in a large bowl.
9. Mix the chicken and the pasta if you like, or you can serve the chicken on a bed of Angel Hair Pasta.
10. Sprinkle some parmesan cheese or grated imported sharp provolone. If you enjoy spicy foods, sprinkle some crushed red pepper.
